I did nothing thanksgiving-y today but in keeping with the trend.. I did try yet another new recipe tonight. I found this one in the November issue of Cooking Light Magazine.

Served with organic rice.. this was a pretty good, different, dinner. I cooked a little bit longer than it called for to soften the peppers a little bit more. The hubs wouldn't have liked them crunchy. I also used regular coconut milk instead of light so that it could be completely organic.
On a side note...
I was looking back at pictures today.. and can not believe this was just about a year ago..
Man.. they have gotten so big!

Thanks, Giada
I love Food Network.. and probably my favorite show to watch is Giada at home.
Here are two new recipes I tried this week from the show.
Ravioli with Arugula, Tomatoes, and Panchetta.

This recipe was SOOO easy. Perfect for a week night when you are in the mood for something good but don't have the time to cook. I think it maybe took 20 minutes.. if that. Pretty healthy.. and pretty much all organic which is makes me happy :)
Grilled Pork and Fontina Sandwiches.

This recipe was also pretty easy and yummy. I love BIG tasty sandwiches.. so this hit the spot. I think the only part of the sandwich that was not organic is the fontina and the pork was all natural..natures promise- not quit organic but the next best thing i could get my hands on.
Sided with homemade sweet potato chips.. a very satisfying dinner!
P.S.- My exciting organic find of the week- EGGNOG! I was so excited when i saw it on the shelf at the grocery store :)
