an apple a day..

One more great healthy recipe for the day.  I found this recipe on the back of activity sheets that they had in the lobby of the grocery store one day.  I'm always looking for healthy snacks for the boys (and me too of course!) using fruits and veggies. These are super easy and really yummy too.  I made it while Nolan was napping.. he usually wakes up wanting a "snacky".  This will be an easy treat to just pull out of the fridge.  I'm sure hes going to love it!
 Apple Snack Bags
2 cups apples, peeled and sliced
1/2 teaspoon cinnamon
1/2 cup sweetened, dried cranberries
1/4 cup sliced almonds
-preheat oven to 250
spray cookie sheet with nonstick spray. slice apples into a shallow, flat cooking pan.  Sprinkle cinnamon. Toss. Transfer coated apples to the greased cookie sheet and spread into a single layer.  Place in the oven for 1 hour. Remove and cool.  Combine cooked apples with cranberries and almonds.  Place equal amounts in four ziplock bags or containers and refrigerate.
